Cocoa, vanilla and chia jam ice cream

I think I've maybe become obsessed with banana ice cream.....but who can blame me? The chocolate and chia jam go AMAZINGLY well together, the flavours are amazing and this was the most perfect breakfast for a hot sunny day.

Ingredients:

Vanilla layer:

2 frozen bananas
2 tsp vanilla extract
A splash plant based milk
1 tsp agave

Chia jam:

1 cup frozen berries
2 tbsp ground chia seeds
2 tbsp water
1 tsp agave

Chocolate layer:
2 frozen bananas
1 tsp vanilla extract
1/4 cup dark chocolate soy milk
2 tbsp cocoa/cacao powder

1. The night before peel your bananas and cut them up into small peices and place them in the freezer to freeze overnight.

2. Also the night before make your chia jam, simply leave your berries out for around 30 mins to
defrost then mash your berries. When mashed add in the chia seeds, water and agave and mash again, place mixture in a jar and leave in the fridge overnight.

3. In the morning place the chopped up 2 bananas in a blender and add the milk, vanilla extract and agave and blend until smooth

4. Once smooth place in the bottom of your jar.

5. Go to the fridge and get the chia jam you made the night before and scoop some on top of the vanilla ice cream.

6. Now place the other 2 bananas which have been chopped up in a blender along with the vanilla extract, dark chocolate soy milk and cocoa powder and blend until smooth.

7. When smooth place in the jar on top of the vanilla and chia jam layer.

8. If you want you can top with a raw cocoa sauce and you can find the recipe Here

Enjoy!
